When making omelets, it is important to be aware that eggs can be temperamental. Eggs must be purchased fresh, preferably organic, and kept chilled until ready for cooking. If you don't keep them cold enough, the whites won't form properly, and the yolks will break down too much and become runny. This makes your omelets look weirdly colored. It is best to use room-temperature eggs if you are going to cook them right away.

You might also try separating the egg before adding to the pan. The yolk and white should not be mixed together as this can cause the omelet's curdle.
